I currently own a Genesis 270 FTLH. I love the boat and it is a blast with my 2 stroke Yamaha 8hp. However, hoisting and storing 110lbs on the foredeck of my sailboat is not as much fun as I imagined. I am considering a Odyssey air floor, either a 270 or a 310. Since either would be easier to manage I thought the 310 may give me a little more room. Do you think the 8hp will be enough for the 310 or would I be better off staying with a 270? I was wndering if the extra length would make planing with two adults a little easier.

The 8hp is definitely suitable for the 270 and 310. I personally prefer the 270 as it "feels" more agile, but the 310 is only 10lbs heavier, so performance should be comparable. I don't think you can go wrong either way!
